Anyone else obsessed with Starbucks’ Chai lattes? Well then, I have a recipe for you! While there isn’t a lightly sweet option, these airy cookies will satisfy your daily chai cravings one bite at a time.
Prep:
- Preheat your oven to 200 degrees f
- Line baking sheet with parchment paper
Ingredients:
- 3 egg whites at room temperature
- 1/4 teaspoon cream of tartar
- 1/2 teaspoon salt
- 3/4 cups granulated sugar
- 1 tablespoon packed dark brown sugar
- 1/2 teaspoon vanilla extract
- 1 teaspoon cinnamon
In an electric mixer fitted with a whisk attachment start beating egg whites and cream of tartar on medium high speed until soft peaks form. Add the salt, brown sugar and granulated sugar a scoop at a time on high speed until stiff peaks form. Lastly add the vanilla and cinnamon. Fill a pastry bag with meringue (I used a ziplock and fitted with a star attachment). Feel free to get creative with how you pipe your meringues (thats half the fun). I made some small stars along with cookies to use as a garnish for an espresso drink).
Bake your meringues for an hour and a half, then turn off the oven and leave them in there to dry and slowly cool for another hour. Enjoy your chai cloud cookies!
